This is an excellent introduction to the ground-breaking science that Dr. Rolls has done to explore what makes food satisfying and what we can do to eat fewer calories and still feel full. The heart of her research is the discovery that we feel full based on the VOLUME of food we eat, not how many calories it has. So, we can reduce calories by making our food less calorie dense--more volume for the same calories. She provides practical advice and tasty recipes to help you get started. I don't use her calorie density tables in my meal planning, but I absolutely apply the research to my own cooking in order to make them filling with fewer calories.
